Coconut and Lime Energy Balls

We all deserve a little treat now and again, these are not only delicious and simple to make, but also contain fantastic nutritious ingredients. Limes are a great source of vitamin C. Adequate intake of vitamin C is also needed for the building and maintenance of collagen that provides structure to skin and hair.

Method

  1. Place Dry Ingredients into a food processor and blitz. Then add wet ingredients to the mix until fully combined.
  2. Make into small balls roll in topping and place on grease proof paper. Place in the fridge for an hour
  3. These can be stored in an airtight container in the fridge for 3 days.

Makes: 8 Balls (3cm in diameter)                Preparation: 15 minutes (chilling time 1hr)

Dry Ingredients

1.5oz. / 40g almonds

1.5oz / 40g cashews

110g dates

0.5oz / 10g desiccated coconut

1tsp hemp powder

 

Wet Ingredients

30ml lime juice

 

Topping
