So my second article in my series of in season Veg. Today it’s all about the humble cucumber. With summer here it is a great time to eat in-season veggies.
Cucumbers are the fourth most cultivated vegetable in the world. One whole cucumber (8 in) is only about 45 calories; Whilst also a source of Vitamin K, B Vitamins, Vitamin C, Magnesium and Potassium.
As a source of B Vitamins and also containing mostly (95%) water they help to rehydrate the body whilst also replenishing your daily vitamins. Don’t forget to leave the skin on as this is where most of the Vitamin C is stored.
A really easy to make fresh mint and cucumber dip that’s great for sharing and dunking

PREP TIME: Only 5 minutes
SERVES: 6
Ingredients
200 g low fat Greek-style natural yogurt
14 g fresh mint, washed and finely chopped
0.5 cucumber, washed, deseeded and cut into crescents
Juice of 0.5 lemon
Method
Mix the yogurt, mint, cucumber and lemon juice together. Season with freshly ground black to serve with crudités; oat cakes or tortilla chips
Top Tip: For you plant based individuals substitute the Greek style yoghurt with soya or coconut
Don’t want to eat cucumber well Cucumbers also have fantastic skin benefits as well. Cucumbers have a cooling and soothing effect that decreases swelling, irritation and inflammation when used topically. Cucumber slices can be placed on the eyes can decrease morning puffiness or alleviate and treat sunburn when placed on the affected areas. Especially when used straight from the fridge.
Note: Cucumbers are often sprayed with pesticides so it is important to buy organic or even better, grow them yourself.
